Mayonnaise is such a sumptuous sauce and the Spanish use it to accompany everything from seafood to salad. It can be spiced up with garlic or paprika, given an extra zing with some lemon juice or lime, or thinned and mixed with olive oil to make the perfect salad dressing.
We make all of our own mayo dips to accompany our wide range of tapas dishes using free-range Great British Eggs from local farms here in West Sussex.
